Cockfighter's Ghost

The legend states that in 1835, Governor Macquarie directed explorers to find routes to open up the Hunter Valley. One wild and windy night, as the explorers attempted to cross a flooded creek, their strongest horse – Cockfighter – drowned bravely trying to get his rider across the raging waters.
When convict gangs were later sent to construct a bridge over what was now known as Cockfighter’s Creek, they swore that on stormy nights you would see Cockfighter’s Ghost galloping free across the countryside.
The legend was born.
To this day it is still reported that Cockfighter’s Ghost still haunts the vineyards planted on the bank of the creek.



Audrey Wilkinson

The Wilkinsons are true pioneers in the Australian winemaking industry.
By the early 1900s, Audrey Wilkinson collected awards around Australia for his hock, claret and fortified wines. Large quantities were exported to London.
Audrey committed to leading-edge technology which, at the end of the 19th century, included open cement fermenters and steam-powered crushers and hoppers.
It was here the Audrey Wilkinson legacy was born.



James Squire

James Squire has been crafting beers in honour of Australia’s first brewer since 1998 and has remained ever-curious about where their flavour journey will take them next.
The bar has been raised a bit since James Squire’s day, but some things never change – like brewing small batches in traditional copper kettles to deliver the highest quality every time. They only brew the beers they like and aim to open up a more flavourful world for everyone.



Murray River Salt

Murray River Salt and began producing premium gourmet salt flakes utilising concentrated brine from the Mourquong Salt Mitigation Basin, which is located 13 kilometres northwest of Mildura in New South Wales. The concentrated brine is pumped up from an ancient inland sea where the water travels through several canals before making its way to crystallizer ponds. The water from the aquifer is highly mineralised, which gives the salt flakes their distinctive pink hue and soft flavour. This natural salt contains no additives or preservatives and is full of good trace elements such as magnesium and calcium. Murray River Salt flakes are considered essential by foodies and top chefs across Australia and more recently around the world. Worldwide recognition of the quality of Murray River Gourmet Salt continues to grow with the salt flakes recently being awarded a Superior Taste Award from the International Taste Quality Institute in Europe and an Innovation Award at SIAL China in 2012.
