CITRUS CHILLI PESTO

Our Pesto would have to be our showpiece sauce – delighting all of our customers when cooking and eating our famous BBQ King Prawns. SALSA VERDE

Another Classic Italian Sauce – simply meaning green sauce. All over the world, versions of this sauce feature on some of the dishes of the best Chefs and Restaurants to much acclaim. Why – It so packed with flavour from some classic ingredients such as Parsley, Coriander, Mint, Capers, Garlic and often anchovies. A number of versions thicken the sauce at the end with bread and is also blended with olive oil. This sauce is a must have with vegetarian and seafood dishes as a dressing, marinade or accompaniment.

BBQ CHAR SUI MARINADE

Another Super Sauce that matches so well with a number of meats. We utilise this sauce in our BBQ Char Sui Pork Stir Fry but is equally appropriate with Chicken and beef. This sauce is most suitable for BBQ marinading because once it cooks with the meat item, the sugars in the sauce caramelised beautifully to give you that real Charred BBQ flavour with a sweet finish. Included in this sauce are such things as Char Sui sauce, Hoi Sin Sauce, Soy, Garlic, Ginger, Chilli and Coriander root. Sure to impress with simple ingredients only needed.

SPICY TOMATO DIPPING SAUCE

This Sauce is very special to us at Bar-Be school because it came about from producing a sauce from the remaining ingredients from our very first BBQ Meat Class in 2004! We loved it and have been making and serving it to every attendee since then. We serve it with our BBQ Beef Kofta’s but is also beautiful served with any grilled or roasted meat. The sauce includes tomato, onion, garlic, coriander, cumin, paprika and seasoning. It’s quick to cook yet has a great shelf life – if you don’t it all at once!

CARAMELISED SHALLOTS

I think all Meat lovers enjoy caramelised onion jam or relish and this certainly isn’t letting the side down. We take some of the best French Shallots available, combine them with a range or spices and balsamic vinegar and let them cook down. We then finish with a roasted beef jus. This is a slow cook sauce and gets even better with flavour the longer you cook it. We serve this with our BBQ Hood Roasted Rib of Beef in our Beer Class yet it is so good to serve on and with a number of dishes such as brushetta, tart fillings (with goats cheese), antipasto platters and as an inclusion to a rich jus as served with the sauce.
